Delaco Sofia eggplant mousse

4 medium eggplant

250 g minced beef pulp

1 large onion

1 tomato cut into cubes

200 g Cheese Delaco Sofia shaved large

1 tablespoon chopped dill

1 tablespoon oil

salt and ground black pepper

Method of preparation

To prepare this eggplant cheese with cheese, you must cut the eggplant in two, long. Then carefully peel them, so that about a centimeter of core remains on the shell, salt and bake.

The eggplant core is chopped and heated in hot oil, adding the chopped onion to thin slices. Fry until the onion becomes glassy. Then add the meat and tomato cubes. Stir constantly until the meat turns brown.

The composition is divided into 8 equal portions, which are filled with eggplant and sprinkled over a thick layer of Delaco Sofia cheese. The stuffed eggplants are put in the oven for a few minutes, until the cheese is melted, then it is garnished with dill.
