Caltabosii are traditional Romanian preparations, which contain minced pork organs.
2.5 kg of rice
12 small onions
pig organs (lungs, kidneys, heart)
2 tablespoons pepper
6-7 tablespoons butter
Method of preparation
Boil the organs in salted water. Separately, heat the finely chopped onion in the pork lard, then add the rice and let it brown slightly. Pour hot juice (the one in which the organs were boiled) over the rice, mix well and let everything boil over low heat, until the rice is well browned.
The boiled and chilled organs are chopped by the mincer, then the composition is mixed with rice and spices, as desired. Homogenize the ingredients, then put the mixture in the clean intestines of the pig and bind them to the ends. Put the chives in the boiling water, about 10 minutes.
Remove the chives and leave to cool.
