Method of preparation
Delaco muffins recipe with fresh pineapple and mascarpone from Delaco is a treat for the little ones!
To prepare the muffins start with the egg whites from the 4 eggs, which are foamy with a pinch of salt and 1 tablespoon of sugar. With the rest of the sugar beat the egg yolks foam, to which we will add the 3 tablespoons of cocoa, milk and oil.
Also in the composition of yellows we incorporate the flour in which we have previously put 1/2 sachet of baking powder.
When they are done, add the whipped whites to the composition of the yolks and mix gently until they are homogenized.
Meanwhile, we clean the pineapple and cut half of it into small cubes, and the other half into very thin rounds.
We put the muffin-shaped papers in a tray, add the composition to fill the three-quarters of the paper, then put on each pineapple cubes.
Put the muffins in the oven and bake about 20 minutes at 180 degrees C, in the preheated oven.
About 25 pieces come out of the above composition, depending on how large the used papers are.
To prepare the cream cheese, the Delaco mascarpons are whipped with the sugar, until it becomes a soft and fluffy cream and is flavored with the essence of pineapple or vanilla (depending on taste).
It is decorated with dried pineapple rounds, which we obtain by placing in the oven, on a low heat for about 25-30 minutes, the fresh pineapple rounds.
Place one round pineapple in each form of muffins and keep it back in the oven on very low heat until it dries well and becomes crispy.
