Spinach pudding with rice is a healthy and tasty preparation, which can be served simply or as a side dish with a steak.
1/2 kg spinach
30 g butter
1 tablespoon flour
2 tablespoons rice
1 tablespoon lemon juice
250 ml of milk
Method of preparation
Clean the spinach and boil it in salted water. Chop the very small spinach, with the help of the blender or the grinder. Put the heated milk in a saucepan and add the butter.
Dissolve the flour with a tablespoon of milk, then pour it over the boiling milk. Allow to thicken slightly, until the consistency of a bechamel sauce.
Mix the sauce obtained with rice, salt and lemon juice, then add the spinach puree. Pour the composition into a heat-resistant vessel and bake for 30 minutes.
Allow the pudding to cool slightly before serving.
