For the dough

200 g flour type 405

100 g butter, cut into pieces

1 yellow

1/2 teaspoon salt

2 tablespoons ice water

For the gasket

250 smoked bacon, boiled

10 g butter

For cream

300 ml cream for cooking

4 eggs

150 g Emmentaler Delaco ras

salt, pepper, freshly ground nutmeg

1 tablespoon chopped vegetables (parsley, thyme)

Method of preparation

Perfect for a light snack or dinner, the Lorraine quiche will be adored by children! Here's what you need to do to prepare this delicious recipe.

For the dough, sift the flour on the work table. In the middle of the pile of flour is made a hole, in which are placed butter, yolk, salt and water with ice, mixing well. With the hands we knead slowly and steadily until the composition becomes a smooth dough. From this dough forms a ball, which we wrap in foil and put in the refrigerator half an hour.

After 30 minutes put the dough in the round tray, press the edge, cut the dough surplus and prick several times with the fork. Leave for 15 minutes in the heated oven at 200 ° C.

Meanwhile, cut the bacon into 4 mm cubes and fry it in 10 g of melted butter. Separately, mix well the cream, eggs, cheese, spices and vegetables.

When the dough has baked, remove it from the oven, sprinkle the bacon and add the composition of cream, eggs and cheese. Allow to be heated in the oven at 175 ° C 30 - 40 minutes. When it is beautifully browned it is removed and served to the loved ones.
