Peach jam

The apricot sweet is very aromatic and is prepared in summer, when it is the season of these fruits.


Preparation time

60 minutes




1/2 kg apricot

1 kg old

2 cups water

1/2 lemon

1 teaspoon of baking soda

Method of preparation

Remove the kernels from the apricots, then place the fruit in a 2-liter pot of water, in which a teaspoon of baking soda has spread. Keep apricots 2 minutes in this liquid, then remove and wash in two rows of cold water.

Meanwhile, heat the sugar with two cups of water and let it coil a thick syrup.

Add the apricots over the syrup and leave to boil for about 15 minutes. Gather the foam several times, and after the boiling is no longer strong, you can add the sliced ‚Äč‚Äčlemon into thin slices. Let the cake boil for another 15 minutes, then set aside and leave to cool.

Sweet pour into jars, which you tie with cellophane and keep in a well-ventilated room.

Green apricot sweet


1 kg green apricots

1 kg old

1/2 l of water

a lemon


Method of preparation

The fruits are harvested young, when the seed has no shell.

It starts with a thicker needle (2 mm) in 7-8 places (it stretches from one side to the other), keeping them in cold water, until this operation is finished, to get bitter from them.

After that, put in a bag of simple, wider gauze (not to be crammed) that will be introduced into boiling water.

Leave it until it begins to give the first boil, then put it in cold water and leave for 15 minutes. The cold water changes 4-5 times a day and each time the apricots are left to stand for 15 minutes.

They are then placed, in a sachet without a sachet, allowed to drain and put into the well-mixed syrup, along with lemon juice (which prevents sugaring) and vanilla.

The same recipe, in the same way, can be prepared with green plums.
